the story behind the bluegrass baker

My name is Chloe Hopkins and I am the owner and baker behind The Bluegrass Baker. Starting at a very young age, baking has always been a huge part of my life. Any excuse to get in the kitchen and bake I was on it, no like literally any excuse (hello, President’s Day cupcakes or what’s up Earth Day brownies). I was always trying out new recipes with my mom and eventually on my own. Anytime a recipe remotely came out okay, I would then proudly pass them around at family events and bask in all of the compliment glory that came after (it was my family and I was like 10, so bias should seriously be taken into consideration here). My love for baking though was no secret y'all. Flash forward through the years and after countless desserts and 100 million chocolate chip cookie recipes (accurate count, #math), here I am. I was being asked over and over again why I don't sell my stuff, so I began doing just that (very timidly). I remember getting my first order and performing a full on middle school dance team routine in my kitchen, out of pure excitement. I told myself, okay Chloe, you just need to sell one cake a month and that will be enough to "fulfill you" (Gosh, past Chloe was skeered). In less than a year, I was completing multiple cakes a week with a schedule that was becoming more and more booked. I had spent the last two years delivering cakes to both Louisville and London and I realized that I could do this full time. I immediately knew I wanted to relocate and bring this business to London, KY, my hometown. I love Louisville, but my heart will always belong to the small town charm of London. I am so excited to be apart of Downtown London and bring something to the local community that it desperately needs, sweets! Come visit, say hi and let me serve you a slice of cake!
